Those who have been following me for a while now, know that I chose to live as healthy as I can be. Aside from exercising, I chose to eat healthy most of the times (with exceptions of my cheat days which are on Friday in the evening and on Saturday). As long as I can remember I have loved cooking. My mother is a professional chef so I guess I got the passion from her. Unlike what most people think, healthy foods are very tasty and diverse. My lifestyle is very broad, I eat everything from meat to sweet potatoes to vegetables. I simply prepare them differently and avoid certain foods. Pictured above is one of my favorite (and quickest) salads which I mostly enjoy in the summer (but it's as delicious in the winter). Here is what you will need: A teaspoon of olive oil A handful of sundried tomatoes Rocket salad/arugula or regular salad Half of a zucchini Can of tuna in water Sesam seeds Basilicum vinegar Pinch of sea salt and pepperRinse the zucchini and start slicing the zucchini with a cheese slicer or other peeler. By this you will create thin slices which will eventually curl up when presenting the dish. Place the olive oil on a grill and slight grill the zucchini until soft. Set aside and start cutting the tomatoes. Wash the salad and place on plate or bowl. Add the tomatoes, leaked tuna, sesam seeds and add sea salt and pepper to flavour. Start topping the salad with the zucchini and serve with basilicum vinegar. Easy right?
